iPhone 2.0 Firmware Adds Secure Erase

The iPhone 2.0 firmware will include a secure erase option to prevent recovery of private data, according to an AppleInsider report.
The function will found in Settings > General > Reset > Erase All Contents and Settings.
Similar to the Secure Empty Trash function in OSX this function will likely be one in which all data is deleted, unlinked, and then overwritten several times to make it irretrievable. The erase will take about 1 hour.
