How to update and then jailbreak and unlock iphone 3gs

Now im in 4.3.1 and need to update it to ios 5. Previously i jailbreaked and unlocked it in a local mobile shop. So i have no idea about these stuffs. Can anyone please give me the steps to do it please. The details of my phone are given below
model: iphone3gs
version: 4.3.1(8G4)
modem firmware: 06.15.00
