Ryan Petrich has updated his Display Recorder app to support 'Save to Camera Roll' on the new iPad.

Display Recorder lets you easily take video captures of your iPhone, iPad or iPod touch screen.

Quicktime can record iPhone/iPad screen now, free and no need jailbreak. Why you need Display recorder? To get better quality video like 4K or HD video, I'd recommend Acethinker iPhone Screen Recorder. Also support stream video recording on iPhone.
